Recipe time! So I made these bad boys a couple of days ago and they are almost gone! Note to self: make double the recipe, every time.
Kind of Anzac biscuit-ish, followed a vague recipe but like I normally do, added and subtracted stuff depending on what I have at home. and what I felt like devouring at the time.
Nutmeg’s Oat Biccies
Ingredients:
4 tbsp olive oil
4 tbsp honey or maple syrup
1 1/4 cup almond meal
1 cup rolled oats
1 tsp baking powder
1 tsp cinnamon
4 chopped dates (could totally sub for choc chips!)
2 tbsp chopped nuts of your choice (I like to use walnuts)
1-2 tbsp nut butter (I used peanut)
Method: Mix all ingredients together, roll into balls + flatten, place on baking tray, and cook for approx. 15 minutes at 180 degrees (or until deliciously golden).
This quantity made 10 cookies for us. Will most likely double the recipe next time! These make such an excellent snack for the whole fam and are high in protein + good fats!
